Summer arrives next week and many of us are still struggling to take off a few pounds before we get caught on the beach in that bikini. Oh, who are we kidding we aren't worried about the bikini, I don't even own one. I am just trying to figure out if I want to be seen in shorts.

It was a long Winter, and Spring went by so fast that I haven't had a moment to organize the closet. I still need to figure out what the summer wardrobe should look like but I do know this: I am not wearing another faded t-shirt. I am also not going to go out and spend a dime on new summer frocks until I have shed the winter 10 or maybe 20.

So what's the plan? Simple, I am diving into the summer salad and I don't mean potato or macaroni. I am going to try to make at least one meal a day a salad and I mean lettuce plus some other goodies I can find. It won't be that bad as long as I get a bit creative.

There is no reason that a salad meal has to be boring. Nowadays there are hundreds of ideas on how you can make a salad go to the next level. I am going to suggest you start by visiting some Hudson Valley Farm Markets for local fruits and veggies. Adding a simple apple or a fresh carrot can take a salad to a brand new level.

Just be careful what you add and how much. Fruits can have a lot of sugars and so can some veggies. You might be taking your salad up a notch while also taking the calories up a lot too. Don't be afraid to add nuts or even a protein like chicken or shrimp.

As for veggies, you should think about all of them including garlic. I personally enjoy adding fresh cabbage to a salad to add crunch but then again I am the girl who can eat coleslaw until the cows come home. Fresh green beans, chunks of cauliflower, raw broccoli, and fresh peas will brighten up a bowl of plain lettuce every day.
